Ingredients:
- 2 cups flour
- 1 Tablespoon baking powder
- ½ cup cold butter – cubed
- ¾ cup cold milk
- available fresh fruit – strawberries, peaches, blueberries, plums, pears or whatever you can find. Canned pears work really well too.
- 2 tablespoons sugar or to taste
- several dabs of jam – any flavour
Directions
- Mix dry ingredients together with a pastry blender or in a food processor until pea sized chunks are formed
- Add milk and mix until it just holds together
- Spread a sheet of plastic wrap out on a cookie pan and put ball of dough on it
- Chill for ten to fifteen minutes
- Preheat oven to 450 degrees
- Roll out dough to ½ inch thick in any shape you want. I like to make it oblong to fit on the cookie sheet.
- Dab with butter. Slice fruit to approximately a quarter inch thick and spread out on top of dough.
- Sprinkle with sugar, and dab jam hither and yon. It will melt to form a glaze.
- Bake at 450 degrees for 20 minutes. Serve warm with whipped cream or yogurt.
