Tasty Tuesday Skinny Shake - Tastes Like a Wendy's Frosty!

My daughter found this recipe and it's yummy. When you're looking for a quick, healthy snack or need something fast and filling for breakfast, try this:

In a blender mix:

¾ cup Almond Milk
About 15 ice cubes
½ tsp Vanilla
1-2 Tbsp unsweetened Cocoa Powder
1/3 of a Banana

Blend. 

Only 145 calories per serving!

Tasty Tuesday Sandwich Muffins


Gluten Free Low Carb Sandwich Muffins

If, like me, you’ve gone gluten free, low carb, or both, you’ve probably had those moments of “Bread! I want bread!” Sadly there aren’t a lot of low carb recipes that come anywhere close to filling the void. These yummy low profile muffins bake in 20 minutes and really hit the spot.


Ingredients:
1 ½ cups Golden Flax Meal
½  cup Hemp Meal
½ tbsp baking powder
½ tbsp baking soda
½ tsp salt
2 eggs
½ cup melted butter (don’t over heat)
1 ½ cups whole milk

Preheat oven to 350 degrees. Spray muffin pan lightly with Pam or wipe with oil.

Blend dry ingredients together in a medium mixing bowl. Make a well, add eggs, whisk the eggs lightly. Add milk and butter, gradually whisk wet ingredients into dry ingredients till well mixed. Batter will be runny initially, then thicken rapidly.

Drop app. 1/3 cup batter at a time into muffin tins. Bake for 30 to 35 minutes on a middle rack position. (Baking time may vary depending on your oven and local weather) Makes 6 muffins.

Net Carbs: 3 per muffin (All the carbs are from the whole milk --for zero carb try substituting no sugar added Almond Milk)
