Gluten Free Low Carb Sandwich Muffins
If, like me, you’ve gone gluten free, low carb, or both, you’ve probably had those moments of “Bread! I want bread!” Sadly there aren’t a lot of low carb recipes that come anywhere close to filling the void. These yummy low profile muffins bake in 20 minutes and really hit the spot.
Ingredients:
1 ½ cups Golden Flax Meal
½ cup Hemp Meal
½ tbsp baking powder
½ tbsp baking soda
½ tsp salt
2 eggs
½ cup melted butter (don’t over heat)
1 ½ cups whole milk
Preheat oven to 350 degrees. Spray muffin pan lightly with Pam or wipe with
oil.
Blend dry ingredients together in a medium mixing bowl. Make a well,
add eggs, whisk the eggs lightly. Add milk and butter, gradually
whisk wet ingredients into dry ingredients till well mixed. Batter will be runny initially, then thicken rapidly.
Drop app. 1/3 cup batter at a time into muffin tins. Bake for 30 to 35 minutes on a middle rack position. (Baking time may vary depending on your oven and local weather) Makes 6 muffins.
Net Carbs: 3 per muffin (All the carbs are from the whole milk --for zero carb try substituting no sugar added Almond Milk)
