Tasty Tuesday -- Creamy Noodle Kugel

Creamy Noodle Kugel

Need a fast-fix coffee cake or snack cake? This does the trick and the secret ingredient is...ramen noodles! No, I'm not kidding. Those packs you get 10/$1.00 on the sale rack can be your best culinary friend.

3 packages (3 oz ea) ramen noodles, any flavor
3/4 cup cottage cheese
3/4 cup sour cream
2 eggs
1/3 cup granulated sugar
1/2 cup golden raisins (optional) or substitute an equal amount of any of the dried fruits you find like Craisins
2 tablespoons packed brown sugar

Start a large pot of water to boil. Discard the flavor packets from the noodles. Preheat oven to 350F. Spray a 9" square baking dish with non-stick cooking spray.

When the water in the pot is boiling, break up and add the noodles. Boil for 2 minutes. Drain and rinse with cold water.

In a large bowl, whisk together the cottage cheese, sour cream, eggs and sugar. Add noodles, and raisins. Toss to coat. Pour into the prepared baking dish. Sprinkled with brown sugar.

Bake at 350F for 35 to 40 minutes or until center is set. Serve warm or at room temperature. Yes, it's great with Cool Whip or ice cream, but it also makes a great little treat for a brown bag lunch.
