Tasty Tuesday Slow Cooker Tapioca Pudding

Slow Cooker Tapioca Pudding

Now, Mama Lena isn't advocating chowing down on this every day, but once in awhile when you know you'll need a bit of a treat, this comes in handy. I make a half-recipe, just to keep from making a total pig of myself.

Makes 8 servings (about 1/2 cup each)

4 cups milk
2/3 cup white sugar
1/2 cup small pearl tapioca
2 eggs, lightly beaten

Stir together all ingredients in the small slow cooker. Cover, cook on Low 6 hours or Medium (if you have that setting) for 3 hours, stirring occasionally. Serve warm if desired, or cool in the refrigerator for several hours.
