So the big game is over, yeah, but there's never a bad time to have nachos. Never. I like to have mine while watching racing. Why? Because it's fun. Grin.
NACHOS
1 lb ground beef, chicken OR pork - up to you
1/4 lb chorizo (ground)
1 pkg taco seasoning
Cook meat according to package, but add garlic and onion powder to taste while cooking. Drain, then add the water and seasoning.
While you're doing that you'll need:
1 head lettuce, chopped
2 tomatoes, chopped
1 small onion, chopped
1 can refried beans - heated approx 1 minute in the microwave
1 pkg cheese
1 can cheddar cheese sauce - heat in microwave for approx 30 seconds to make it spread better
1 bag corn chips - I suggest Tostitos lime. YUM!
I do this one of two ways:
1 - spread the heated cheese on a serving platter, then heap chips onto the cheese. Add the meat and beans in a smooth layer. Then add the lettuce, tomatoes, onion, extra spreadable cheese and shredded cheese. You can also add guacamole, sour cream, and taco sauce at this point too, then serve and everyone can steal from the plate as they wish.
OR
2 - follow the same steps but one individual plates so everyone has smaller servings and they can add or leave off whatever they want.
Eat and enjoy!!! We love this for NASCAR races, football games, and the odd hockey game. :-)
