1 1/2 Cups Golden Flax Meal
1/2 Cup Granulated Splenda
1 Tbsp Baking Powder
Pinch Of Salt
1 Tsp Cinnamon
3 Eggs
1 Cup Unsweetened Almond Milk
Been working on perfecting this recipe for awhile now. One of the things I miss most about a low carb diet is breads and desserts. These pancakes make a good breakfast, but I've also made them for an evening snack. Yummy! I'd make these even if I wasn't doing no carb! The Flax meal gives them a kind of nutty flavor.
Preheat a heavy weight skillet, melt in 1 tbsp butter
Mix dry ingredients with a large spoon
Make a well in the center, drop in eggs, add Almond Milk. Stir again till well blended. Drop 1/3 cup at a time into hot buttered skillet. Batter will be thicker than white flour cakes. Make sure they're thoroughly cooked before you flip them. Should have enough batter for two to three panfuls.
The only carbs are in the Flax meal, and it’s equal fiber to carbohydrates, so they're Zero net carbs -- at least until you add no sugar syrup or unsweetened jam.
Just writing this down makes me hungry… I might just have to go do a proof run!
