Tasty Tuesday - Southwestern Casserole by BJ McCall

Southwestern Casserole

This is an easy casserole to put together. Gather your ingredients, layer them like you would lasagna and bake. Serve with a green salad for a tasty dinner.
Serves four.


9 Corn tortillas
1 pkg grilled chicken strips  (cut into smaller chucks) or 2 cans of white chicken meat (drained)
1 can of black beans
1 can of corn or ½ pkg of frozen corn (thawed)
1 8oz tub of sour cream
1 16oz package of shredded Mexican cheese
1 jar of Chili Verde salsa (green salsa)
1 small chopped onion

Put your casserole together

Spray a 9 x 6 casserole with vegetable spray.
Layer the ingredients like you would lasagna.
Begin with a layer of chili verde salsa
Cut three corn tortillas in half and arrange in the dish
Add half of beans, half of the corn, half of the chopped onion, half of the chicken
Add half of the shredded cheese
Add half of the sour cream
Next add a layer of salsa and a layer of tortillas
Now add the second half of the beans, corn, onion, chicken, cheese and sour cream
More salsa
Layer on three tortillas
More salsa

Cover with foil and bake at 350 for 25 minutes. Uncover and bake for 5-10 minutes.

A perfect meal to make while enjoying a margarita,
