They say you can take the girl (or boy) out of the South, but you can't take the South out of us. One of my favorite desserts growing up was my Nana's Mississippi Mud Cake. It's a staple down South, and I can't help but share the goodness!

Mississippi Mud Cake
Ingredients for Cake:
2 C. sugar
4 eggs
1/3 C. cocoa
1 C. nuts
1 C. shortening
1 ½ C. flour
3 tsp. vanilla
1 pkg. marshmallows
1 box powdered sugar
1 ½ stick butter
Directions:
Cream sugar and shortening, add eggs and beat. Sift flour and cocoa together and add to mixture. Add vanilla and nuts. Pour into greased and floured 9 x 13 pan. Bake at 300 degrees for 30 mins. Remove from oven and spread with marshmallows. Return to oven for 10 mins. and melt. Cool cake before icing.
Ingredients for Icing:
1 ½ stick butter, melted
1/3 C. cocoa
1 box sift powdered sugar
½ C. evaporated milk
1 tsp. vanilla
1 C. nuts
Directions:
Sift sugar and cocoa, mix well with melted butter. Add milk, vanilla, and nuts. Spread over cake and let stand a while before serving.
